The story of the crawfish pie goes like this: At one time in Fisherman’s Market history, we had four guys on the crew who hailed from that little slice of comfort food heaven: New Orleans. In a burst of nostalgic inspiration, Greeley Alder, had the idea one day to whip up some pies from his mother’s old recipes. And the rest is pretty much history. Since then, our Crawfish Pie has been met with rave reviews from both our regulars and folks just passing through, like Guy Fieri from the Food Network’s Diners, Drive-ins and Dives. When Guy visited our quiet corner of Oregon to film a segment of his show at The Fisherman’s Market, the Crawfish Pie was his favorite dish.

Think Oregon When You Think Crawfish
We bet you, like most people, tend to associate crawfish with southern cuisine, particularly the food in Louisiana. But in Oregon, we have our own wild version of what Louisianans think of as “mudbugs”. We actually have a great resource of fresh, clean crawfish in the high desert lakes of central Oregon, beyond the famed Cascade mountains. They’re wild harvested much like lobster are caught—in little traps. We sell a lot of live crawfish in the summer locally and that’s what inspired Greeley to bake that first batch of Fisherman’s Market Crawfish Pies.

Once you receive your frozen Crawfish Pie, preparation is a cinch. The first thing you’ll want to do when it arrives is pop it in the refrigerator to thaw overnight. Keep this in mind when you’re ordering; arrange for your pie to arrive one day before you’re planning to serve it. When it’s thawed and ready to cook, preheat your oven to 375℉, cook for 35-40 minutes and voila! Your Crawfish Pie is ready to enjoy.
